Broccoli & Cauliflower with Cheese Sauce

Ingredients

1 cauliflower
1 broccoli
1/4 cup butter
1/4 cup flour
2 cups milk
2 cups cheddar, shredded
dash worcestershire sauce
salt & pepper to taste


General Info:

Serves: 8 people

Instructions:

  1. Cut cauliflower and broccoli into large flowerettes.
  2. Steam flowerettes until just tender crisp
  3. In a saucepan, melt butter over medium heat, sprinkle flour into pan, and whisk until smooth
  4. Slowly add milk, whisking constantly until thickened and smooth
  5. Add grated cheese, worcestershire, and continue stirring until melted; season with salt and pepper
  6. Pour over steamed vegetables and serve

Broccoli & Rice Casserole

Ingredients

1 1/4 cups long grain rice
3 cups chicken broth
2 10 oz. packages frozen broccoli, chopped
1/2 cup butter
3/4 cup chopped onion
1/2 cup flour
3 cups chicken broth
1 cup evaporated milk
2 tsp. garlic powder
1 Tbsp. parsley
salt & pepper to taste
1 10 oz. can sliced mushrooms, drained

Buttered bread crumbs
4 Tbs. melted butter
1 cup seasoned bread crumbs

General Info:
Preheat oven to 350 degrees

Instructions:
  1. Cook rice according to package directions, substituting first amount of chicken broth for water.
  2. Steam or boil broccoli until tender crisp. Do not overcook or the casserole will be mushy... Set broccoli aside.
  3. In a frying pan, melt butter and saute onions until just translucent.
  4. Sprinkle in flour and whisk or stir for 2 minutes over low heat.
  5. Stir in remaining broth ans evaporated milk. Add seasonings and continue stirring until mixture is smooth and thickened.
  6. Place rice mixture in a greased casserole dish. Cover with broccoli and mushrooms and pour sauce over top.
  7. Quickly brown bread crumbs and melted butter, sprinkle over top of casserole.
  8. Bake for 30 minutes or until heated through.

Serving Suggestions & Notes: You can sprinkle this with parmesan cheese for a bit of added flavour
or you can add 1/2 cup freshly grated parmesan to the sauce for a cheesy version.

Broccoli Au Gratin Casserole

Ingredients

6 Tbs. butter
6 Tbs. flour
1/2 tsp. dry mustard
2 1/2 cups milk
3/4 cup cheddar cheese, grated
1 bunch broccoli
1/4 cup parmesan cheese, grated
salt & pepper to taste


General Info: Preheat oven to 350 degrees
Serves 6-8

Instructions:

  1. Melt butter & stir in flour (i prefer a whisk for this).
  2. Add dry mustard and milk, stirringly rapidly to remove any lumps.
  3. Season with salt and pepper, and remove from heat. Stir in cheddar cheese.
  4. Stir in broccoli and pour the entire mixture into a greased cassterole dish.
  5. Sprinkle with parmesan cheese and bake for 30 minutes.

Broccoli Food Facts
Freezing Broccoli
Remove thick stems from broccoli, imerse in a mixture of 4 cups water and 1 Tbs. salt. Blanch for 3-4 minutes; rinse.
Chill in cold water, drain and pack in freezer bags.
Frozen broccoli will last for up to one year.
