Serbian Spinach

Ingredients

1 lb. cottage cheese
6 eggs
1/4 lb. butter
1/2 lb. yellow cheddar
6 Tbs. flour
1 pkg. fresh spinach, cooked & drained

General Info:
Preheat oven to 325º
Serves: 2-4 people

Instructions:
  1. In a large bowl, combine all ingredient; mix well.
  2. Pour into a well greased baking dish and cook for 1 hour or until just heat through.

Garlic Spinach

Ingredients

2 Tbs. olive oil
10 cloves garlic, pureed
1 Tbs. butter
1 1/2 lbs. spinach, trimmed
juice of 1/2 lemon
salt & pepper to taste


Instructions:
  1. Puree garlic and olive oil in food processor or with a hand blender.
  2. Heat garlic oil mixture in a large skillet over low heat; add spinach and cook until just wilted, about 5 minutes.
  3. Remove from heat, sprinkle with salt, pepper and lemon juice; toss well.

Spinach Curry

Ingredients

1 lb. fresh spinach, chopped
2 Tbs. oil
1/2 tsp. mustard seed
6 cloves garlic, minced
1/4 cup tomato paste
1/2 tsp. turmeric
1 Tsp. corrinader powder
1/2 tsp. cumin poder
3 Tbs. water
salt to taste

Serves:4

Instructions:
  1. Heat oil in a frying pan over medium heat unitl it's hot.
  2. Add mustard seeds, and let cook until they pop; add garlic and tomato paste; stir and suate 2 minutes
  3. Add spinach and all remaining seasonings; stir well and reduce heat to medium low.
  4. Cover and cook for 5-8 minutes


Serving Suggestions & Notes:
Serve with grilled chicken and Basmati rice for a quick meal.
